Polyphenols arearomaticcarbon compounds and are found as bioactive substances in plants, e.g. in the form ofcolorants (flavonoids, anthocyanins ), flavorings and tannins as well as in certain foods. Due to their pharmacological properties, polyphenols are also used asmedicinal substancesfor the treatment of diseases (e.g. forpreventionofcardiovascular diseases ). The pharmacological effects are similar to those of a low-carbohydrate diet, for example to prevent vascular calcification.
